Early pepper sauces were made from naturally-fermented salted pepper mash mixed with vinegar and bottled in hand blown glass bottles. Fermentation allows the natural flavor of the sauce to develop as the pepper mash ages.  Another vintage method was to pour boiling vinegar over fresh chiles to make pepper vinegar.
